I had a nice conversation about food with Katie Workman, who is the author of “The Mom 100 Cookbook.” Her second cookbook, “Dinner Solved!” will debut in August.

Besides being a mother of two boys, a cook and a writer, Workman appears on television and radio shows, teaches cooking classes and is an activist in hunger issues. She’s an advocate for family meals; so with planning, she cooks and serves family meals just about every day of the week.

These easy Greek Roasted Chicken Thighs marinate ahead of time and can be grilled or roasted. Workman says, “Combine oregano, olive oil, lemon juice and garlic or some other member of the onion family, and only good things can happen. And not just good things. Clean, bright-tasting good things, healthful good things that adults and the kids like. Summery good things.”

She served the chicken with pretty zucchini ribbons on the side. Again, pure and simple.
