I had two cornbread muffins in the refrigerator and thought about this Out of the World Eggplant recipe I had been wanting to test. Eggplant is boiled and mixed with beaten egg and seasoning, then folded into cornbread crumbs and cheese. This is a quick and easy dish.

The breadcrumbs for the topping can be Italian-style that you moisten with 1 tablespoon melted butter or, if preferred, toast bread and add plain buttered breadcrumbs on the top.
