Cajun Black-Eyed Peas
Serves 8 to 10. Recipe is by Julie Kay.
1 (1-pound) bag dried black-eyed peas
1 (12-ounce) package andouille, sliced
1 large onion, chopped
1 teaspoon salt
1 bell pepper, chopped
3 stalks celery, chopped
5 cups water
3 green onions, chopped
1. Put dried peas in a large pot overnight and cover with water.
2. Drain peas in the morning and put into slow cooker. Add andouille, onion, salt, bell pepper, celery and water.
3. Cook on High for 3 hours. Turn to Low and continue cooking for 4 to 5 more hours. When ready to serve, top with fresh green onions.
