“Taste of Home Easy Weeknight Dinners” by Taste of Home editors

With school back in session and fall activities starting, I thought it was time to check out cookbooks with simple-to-prepare sweet treats and easy supper ideas that active families will like. That’s how I came across the “Taste of Home Easy Weeknight Dinners” cookbook’s recipe for a crunchy, no-bake bar cookie that youngsters can help make.

Fans of Taste of Home magazine will like the cookbook, which includes a year’s worth of no-fuss dishes divided by cooking method.

The book’s more than 300 recipes include those that can be ready in 30 minutes or less, those that can be frozen and some made with five ingredients.

There’s also a chapter for slow cooker recipes and another called Breakfast for Dinner. Of course, there are plenty of dessert recipes, plus suggestions for jazzing up side dishes.

Each recipe is illustrated with a full-color photo of the completed dish and “cook to cook” comments from the magazine’s readers.

Among the recipes are BBQ Meat Loaf Minis, Favorite Skillet Lasagna, Spinach-Stuffed Chicken Pockets, Balsamic-Glazed Beef Skewers, Cheesy Rigatoni Bake, Frosty Toffee Bits Pie and Hazelnut Chocolate Mousse.

The book’s editors say all the recipes were submitted by home cooks from around the country and tested in the Taste of Home Test Kitchen.
