Sometimes, the day just stinks. That’s OK. Those are the days that make us realize how lucky we are on all the other days.

But on Mondays, or days that feel like Mondays, a good, comforting meal seems to help turn things around.

After many years of research, I think I’ve finally found a solid homemade macaroni and cheese recipe. Mac and cheese is the quintessential comfort food. Cheesy sauce with plump, stick-to-your-ribs pasta is definitely a day changer. Made with any cheese you have on hand or something that sounds good to you at the store, the recipe is really quite flexible. The smoked provolone in this one makes for a deep, rich flavor.

A simple roast chicken also seems to rule on a chaotic day.

Roasting the chicken, skin side up, helps keep the meat moist and tender. The herbs, salt and butter in this recipe make for a coating crunchy with warm flavors.

Crispy golden on the outside and juicy and warm on the inside, roast chicken seems to cure the day that ails you.

Both of these dishes take little preparation.

The macaroni comes together easily and doesn’t take long to bake, or you can serve it straight from the pot.

Put the chicken on to roast while you relax on the porch and try not to touch anything breakable or say anything out of hunger you might regret.

As Scarlett O’Hara would say, “Tomorrow is another day.”
