Christmas menus are most likely set by now, so let’s address leftovers.

After we have all recovered from the big meal, we typically have a few days worth of leftovers. Freeze the meat, whether it be ham or turkey, in a timely manner and remake it into a new dish a month or so later.

One of my favorites is turkey pasta, mainly because I love turkey and angel-hair pasta. Sometimes, I play around with different cheese toppings and, this year, it was pepper jack for a bit of a spicy change.

I have brought the cooking time down on this one mainly because the turkey is already cooked, and all the other ingredients simply need to merge flavors. Cook the pasta on a stove top and spoon the slow-cooked mixture over.

Make the months ahead easier by saving your leftovers for another day. You’ll thank yourself later.
