Forget the lettuce tonight and go for a raw Brussels sprouts salad. Brussels sprouts are members of the cabbage family, so if you like cabbage slaw, you will like this salad.
Normally, I use a mandolin or the slicer blade of my food processor to slice the Brussels sprouts, and I end up with thin shreds.
Today, I used the chopping blade, and I ended up with a chopped salad.
The sprouts are mixed with diced apple, chopped celery and toasted pecans. Dice the apple and celery by hand rather than in a processor so you have it chunkier than the sprouts. The dressing is a light, lemony mayonnaise and sour cream mix.
A spoonful of this crunchy salad is delicious with grilled chicken or a sandwich.
