This is a healthful and colorful salad to have in the refrigerator during the holidays. It’s a mix of garbanzo beans, black olives, nuts, green onions, roasted red peppers, garlic and parsley marinated in seasoned oil and vinegar.

This can be eaten by itself or served over a small bed of chopped greens if you prefer. Great Northern white beans can easily be substituted in place of the garbanzos.
