After roasting a pan of vegetables earlier in the week, I had one zucchini left over. In thumbing through my recipes, I came across Zucchini Fritters, and it said one zucchini would be just enough for half a recipe.
It made five fitters, each about 2½-3 inches in diameter, and they were very tasty.
The recipe is pretty simple — grated zucchini is mixed with biscuit mix, an egg, Cheddar cheese and herbs.
When frying the fritters, have the oil hot but not smoking because you want the inside of the fritter, with the raw zucchini and biscuit mix, to cook some before the outside is too brown.
