And summer Louisiana produce couldn’t be more beautiful. Local markets are filled with brightly colored peppers, tomatoes and oversized bunches of basil. With such rich natural resources, it’s difficult to resist a lovely appetizer like this Sweet Bell Pepper Bruschetta.

Toss peppers with ripe cherry tomatoes, basil and a dressing of olive oil and lemon juice and serve bruschetta over hardy, toasted whole-wheat bread. This red and yellow bruschetta is low fat and clearly delicious.
