Rotolo's Pizzeria will open its new concept, Rotolo's Craft & Crust, next week.

The new location, at 411 Ben Hur Drive, will open at 11 a.m. Monday, Oct. 9. More specific business hours will be set in the future as the restaurant feels out the market.

Mitch Rotolo Sr. said this location is the natural evolution of the Rotolo's brand.

"We started at the south gates of LSU in 1996, and it made sense to put the first prototype location here in Baton Rouge," Rotolo said. "We're adapting with the times and with what this generation wants. I think it's a cool place."

The new Rotolo's features room for more than 150 guests, an expanded bar with 40 taps full of beers, wines and cocktails as well as booth and table seating, an open patio space and a big sign with a new slogan for the pizzeria: "Good food, good vibes, no bulls***."

On top of the menu patrons already know and love, Rotolo's Craft & Crust will feature a slice bar for quick service as well as grab and go options, and an expanded menu with items such as 13-inch stone crafted pizzas, Sicilian pizzas, sandwiches, pastas and entrees like fried alligator and duck tenderloin.

Rotolo's son, Mitch Rotolo Jr., is the general manager of Rotolo's Craft & Crust, and he has led the menu overhaul.

"This is a big thing we've had in the works," Mitch Rotolo Jr. said. "We'll have a couple new items. We switched a couple of ingredients that are just better quality, but also added a few things to add to what we already do."

In time, all the locations could look and feel like Rotolo's Craft & Crust.

"We're going to learn some things," Mitch Rotolo Sr. said of the new development. "Some of the things we've changed we think are phenomenal. Others, we'll have to see how customers will react to it."

"This is going to be how we were in the ’90s when people hung out at Rotolo's," he added. "You might actually get something to eat while you're here."
