When we taste a recipe we particularly like while dining out, many of us take to our cookbooks or, in the modern world of technology, online to try and duplicate it.
Cindy Leopold has enjoyed chicken pho at different Vietnamese restaurants she and her family frequent. She found a recipe, but before long realized she didn’t have several of the called-for ingredients and thought of a few others to add.
Several substitutions later, she had a soup she was most pleased with. I took her recipe a step in another direction by slow-cooking it.
A slow-cooked soup is often a winner for those who are gone for long stretches during the day.
