Louisiana chefs are traveling to Austin, Texas early next week for Louisiana/Lone Star Restaurant Night.

On Tuesday, Oct. 13, chefs from Baton Rouge, Covington, Lake Charles, Shreveport, Alexandria, Monroe and New Orleans will host dinner service with Austin chefs at select restaurants.

The event is a partnership between “Texas Monthly” and the Louisiana Culinary Trails, the latter of which spotlights restaurants and chefs across the bayou state.

Ryan André of City Pork Brasserie & Bar will prepare two courses in a four-course dinner with Austin chef Carlos Ysaguirre at Jacoby’s Restaurant & Mercantile. Baton Rougean Sean Rivera will be André’s sous chef.

André will prepare wild boar flautas and an entrée of cold smoked oyster and house-made bacon spaetzel, finished with a bone marrow butter.

Dinner seatings are at 6 p.m. and 8:30 p.m. at Jacoby’s on Tuesday.

The trip is not unlike the one Andre took last year to Birmingham, Alabama. There, he teamed up with Louisiana Travel, Hoffman Media and seven other chefs to prep dishes at Alabama restaurants.

No offense to Birmingham, but Austin is a bigger beast. That isn’t lost on the Baton Rouge chef.

“This is a very big foodie town,” he said. “We’ll be temporarily taking over that market. It will be pretty interesting to see how it all goes down.”

On Monday, Oct. 12, Rivera will prepare a passed appetizer of smoked shrimp and bacon jam canapes for a media and VIP preview event at the AT&T Executive Education and Conference Center.
