If you want to make something special for dinner New Year’s Eve, try Shrimp Stuffed Eggplant.
Eggplant is available year-round, but make sure you’re getting a fresh eggplant. The skin should be smooth and tight, and avoid soft ones and those with brown spots.
The ones I got last week were wrapped in tissue paper and were just being displayed.
This recipe calls for shrimp, but if you’re splurging, you can add crabmeat, too.
I parboil the eggplant halves for a little while before hollowing out the centers which will be mixed with the seasoning and seafood.
