My family likes almost any roasted vegetable. I recently cut yellow squash like french fries, dredged them in a little olive oil and herbs, then roasted them in a hot oven.
After they baked about 6 minutes I turned them over, topped the “fries” with Parmesan cheese and cooked them until the cheese browned.
Unlike fries, these will not be crispy because squash has so much moisture.
The browned cheese on top adds flavor and a bit of crunchiness.
Measurements do not have to be accurate for a dish like this. Cook the amount you need and add the herbs you like.
