Many of us love a good pork chop. You can do so much with pork because its subtle flavor combines well with most of the ingredients you have in your pantry.
This grilled pork chop is a perfect example. It’s dusted with a seasoning of chili powder, light brown sugar, garlic and onion powders and salt. The spiced brown sugar caramelizes around the chop, which seals in the juices and complements the pork.
You can use fresh pineapple or canned pineapple slices for the salsa. The fresh pineapple slices are grilled; the canned slices are not. The remainder of the fresh pineapple can be served (not grilled) in salads or for snacks during the week.
Top the chop with a spoonful of “cool-hot” pineapple salsa, which has some zesty jalapeño pepper in it. If you remove the seeds and veins of the fresh jalapeño, you have the perfect flavor (without too much heat). The fresh lime juice ties it all together nicely.
