Turkey Meatball Spaghetti
Serves 4 to 6. Recipe is by Julie Kay.
1 pound ground turkey
1 cup Italian bread crumbs
2 (14½-ounce) cans no-salt diced basil, garlic and oregano tomatoes
1 (6-ounce) can no-salt added tomato paste
1 (15-ounce) can no-salt added tomato sauce
1 (8-ounce) package fresh mushrooms, sliced
1 tablespoon fresh basil
1 tablespoon fresh thyme
1 teaspoon cracked black pepper
1 (13.25-ounce) package whole-wheat spaghetti
1. Mix ground turkey, egg and Italian bread crumbs together and fashion into medium to large balls.
2. Put tomatoes, tomato paste, tomato sauce, mushrooms, basil, thyme and cracked black pepper into slow cooker and add ground turkey balls.
3. Cook on Low for 6 to 8 hours. Serve over cooked spaghetti.
Note: If using dried herbs, use a teaspoon of each rather than the tablespoon of fresh.
