Chicken Lentil Soup

Serves 6 to 8. Recipe is by Julie Kay.

4 chicken thighs

1 cup lentils

3 stalks celery, chopped

1 large onion, chopped

2 carrots, peeled and chopped

2 andouille sausages, sliced

1 tablespoon minced garlic

4 cups chicken broth

2 cups water

1. Put all ingredients into slow cooker and cook on low for 6 to 8 hours. If using boned-in chicken, remove skin and bones when cooked and serve.
