Honey Bake Chicken

Serves 4. Recipe is from “Best of the Best from Texas, Selected Recipes from Texas’ Favorite Cookbooks” (Quail Ridge Press). It came from the“San Antonio Conservation Society Cookbook.”

4 tbls. butter or margarine

½ cup honey

¼ cup pineapple juice

1 tbl. Dijon mustard

1 tsp. salt or to taste

1 tsp. curry powder

1 fryer, cut-up

1. Preheat oven to 375 F.

2. In large baking dish, melt butter. Add honey, pineapple juice, mustard, salt and curry powder. Mix well.

3. Coat chicken with mixture and arrange in baking dish.

4. Bake uncovered about 1 hour. Turn once or twice during the baking time.
