Praline Apple Pie

Makes 1 (9-inch) pie. Recipe is in “Best of the Best from Texas Cookbook: Selected Recipes from Texas’ Favorite Cookbooks” (Quail Ridge Press) and submitted by “The Blue Denim Gourmet” cookbook.

1 (9-inch) unbaked pie shell

2½ cups sliced peeled apples (add 1 cup more if desired)

1?3 cup sugar

¼ teaspoon nutmeg

¼ teaspoon cinnamon

2 tablespoons honey

½ cup brown sugar, packed

2 tablespoons butter

1 egg, beaten

½ cup pecans (I used chopped pecans and actually added a little more)

1, Preheat oven to 400 F. Prepare pie shell and set aside.

2. In medium bowl combine apples, sugar, nutmeg and cinnamon. Toss to coat. Spoon apples into prepared pie shell and place in preheated oven. Bake for 15 minutes.

3. Meanwhile, in medium saucepan mix honey, brown sugar and butter. Stir and bring to boil then remove from heat.

4. While stirring, add a little of the hot honey mixture to the beaten egg to temper it and then add the egg to hot mixture. Stir in the pecans.

5. Remove the pie from the oven and pour the honey mixture over the top of the pie. Return pie to oven and bake 10 minutes at 400 F, then reduce heat to 325 F. If pie shell is getting browned, cover loosely with a piece of foil. Continue baking for 25-30 minutes or until set and apples are soft. Serve warm.
