Honey-Roasted Carrots

Serves 12. Recipe is from Southern Rims Journal, the New Orleans JCC Guide to Events and Activities for the Active Adult.

3 to 4 bunches carrots, depending on size

2 tbls. olive oil

2 tbls. honey

Salt and pepper to taste

1. Preheat oven to 450 degrees. Slice carrots into thirds on a sharp diagonal. Bring salted water to boil in large pot with steamer basket. Let carrots steam until just tender, about 5 minutes. Drain and place in a bowl.

2. Add olive oil, honey, and salt and pepper to taste. Toss ingredients. Place carrots on a baking sheet in a single layer and bake for 25 minutes. Loosen them from baking sheet with spatula and remove to a serving bowl.
