Broiled Flat Iron Steak
Yields 4 servings. Recipe is by Teresa B. Day.
1 1/2 to 2 pound flat iron steak(s)
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1. Heat the oven broiler to high. Season meat on each side with salt and pepper. Line a rimmed baking dish with foil then place a roasting or cooling rack on top of the foil.
2. Lay the beef on the rack. Broil for 5 minutes per side for a medium center or 8 minutes for a well-done center. Let the beef rest for about 10 minutes, then slice thinly.
3. Place over a bed of peppery arugula greens and serve with cucumber tomato salad or add blue cheese crumbles and a balsamic vinaigrette or any dressing you choose.
