Makes 1 pound. Recipe is by Cynthia Nobles, who says Virginia peanuts have the largest kernels and the best oil content for roasting.
1 lb. raw, jumbo Virginia peanuts, washed and thoroughly dried
1 tsp. fine salt
1. Preheat oven to 350? F. Spread peanuts in a large, rimmed sheet pan one layer deep. Roast 25 minutes, stirring once after 15 minutes.
2. Remove from oven and toss peanuts with salt. Leave in pan to cool 10 minutes. (During cooling period peanuts will continue to cook and get crispy).
