Ranch Roasted Potatoes
Serves 6 to 8. Recipe is from Kim Morgan, of Baton Rouge.
21/2 lbs. small red potatoes, quartered
1/4 cup vegetable or olive oil
1 (1-oz.) packet Hidden Valley Ranch seasoning mix
1. In an ungreased baking pan, toss potatoes in oil until coated. Sprinkle seasoning mix over potatoes and toss again until coated.
2. Bake at 450 F for 30-35 minutes until potatoes are tender and brown.
