Chicken With Peanut Sauce
Makes 4 servings. Recipe is by Cynthia L. Nobles.
3 large boneless, skinless chicken breast halves
Salt and ground black pepper
1 tbl. vegetable oil
½ cup chopped onion
1 clove garlic, minced
1 can (13.5 ounces) coconut milk
2 tbls. fish sauce
2 tsps. chili paste
1 tbl. honey
¼ cup smooth peanut butter
½ cup dry-roasted peanuts
Cooked rice noodles or Japanese somen noodles for serving
Chopped cilantro for serving
1. Cut chicken into 1-inch pieces and season with salt and pepper. Set aside.
2. In a large saucepan, heat oil over medium heat and sauté onion until translucent, about 3 minutes. Add garlic and cook 15 seconds. Stir in coconut milk, fish sauce, chili paste and honey, and bring to a simmer. Stir in chicken and cook, uncovered, until done, about 20 minutes.
3. Remove from heat and stir in peanut butter and peanuts. To serve, spoon chicken and peanut sauce over noodles and sprinkle with cilantro.
