Baked Apple Halves

Makes 6 halves. Recipe is by Corinne Cook.

3 medium-large apples

½ cup sugar

2½ tbls. flour

¼ tsp. salt

½ tsp. cinnamon

Pinch of nutmeg

5 tbls. butter

Garnish with dollop of vanilla yogurt, ice cream or whipped cream

Sprinkle of pecans or almonds, if desired

1. Wash apples thoroughly. I removed four rather thin strips of peeling using a vegetable peeler before cutting the apples in half lengthwise. Using a small spoon or melon baller, remove core. Place in pan or baking dish that has been sprayed with nonstick coating and set aside. Preheat oven to 350 F.

2. In medium bowl add sugar, flour, salt, cinnamon, nutmeg and butter. Using 2 knives or a pastry blender, cut in the butter until it’s about pea size.

3. Divide the mixture between the 6 halves, place it in the center of each apple half and then lightly press it down onto the apple.

4. Place apples in preheated oven and bake for 20-30 minutes. Test for tenderness at 20 minutes and continue cooking if you like them softer. Serve warm or cold and accompany with dollop of vanilla yogurt or cream and nuts, if desired.
