This Simple Sausage Jambalaya is one of my go-to recipes when I’m in a hurry and don’t have time to even think about what to cook for dinner.

But it’s always a popular dish with my family, and it takes very little time to prepare. My mom used to make this when we were kids, as yours probably did also. As I am wont to do, I have adapted it to make it a little more healthful by substituting low-fat or turkey sausage for pork sausage, and brown rice for white.

I have given approximate amounts for the seasoning, though truth be told I usually wing it. With a family dinner-type dish, that’s usually best anyway, as we all have differing ideas about how hot and spicy our foods should be.

I also usually make 8 servings of this dish. That way we have plenty enough for another night’s meal.
