Yields 1 cup.

2 large ripe avocados

1 clove minced garlic

1 tsp. fresh lemon zest

1 tbl. fresh lemon juice

1 tsp. Dijon mustard

Dash hot sauce

1/2 cup mayonnaise

Salt and black pepper to taste

1. Peel and seed the avocados and place them in a mixing bowl.

2. Using a fork, mash the avocados until creamy.

3. Add in the garlic, lemon zest and juice, Dijon mustard, and hot sauce. Combine until all is incorporated.

4. Fold in the mayonnaise and season with a little salt and pepper. Serve on top of the salmon burgers.

Kitchen Helpers: Kids can be very helpful when making this aïoli. Have them mash the ripe avocado with a fork and incorporate in the other ingredients to construct this flavorful spread. If spreading the aïoli seems a bit too daunting for young palates, try serving it as a dip with carrot sticks for starters.
