Sweet Blue Cheese Slaw
Serves 12 to 14. Recipe is by Beth Colvin.
1 small head red cabbage, shredded
3/4 cup thinly sliced red onion
2 cups shredded carrots
1 cup sour cream
1/4 cup mayonnaise
1/4 cup chopped parsley
2 ozs. crumbled blue cheese
2 tbls. lemon juice
1/2 tsp. sugar
Salt and pepper, to taste
1. In a large bowl, combine the cabbage, onion and carrots. Set aside.
2. In a medium bowl, combine the sour cream, mayonnaise, parsley, blue cheese, lemon juice, sugar and salt and pepper. Stir well to combine.
3. Add the dressing to the cabbage mixture. Stir well to combine. Cover and refrigerate overnight before serving.
