Famous Pumpkin Pie

Makes 1 (9-inch) pie. Recipe is from Libby’s.

¾ cup sugar

½ teaspoon salt

1 teaspoon cinnamon

½ teaspoon ginger

¼ teaspoon cloves

2 large eggs

1 (15-ounce) can Libby’s 100% pure pumpkin

1 (12-ounce) can evaporated milk

1 unbaked (9-inch) deep-dish pie shell

Optional toppings: whipped cream or whipped topping and toasted chopped nuts

1. Preheat oven to 425 F.

2. Mix sugar, salt, cinnamon, ginger and cloves in small bowl.

3. Beat eggs in large bowl. Stir in pumpkin and sugar/spice mixture. Gradually stir in evaporated milk.

4. Pour into pie shell.

5. Bake at 425 F for 15 minutes. Reduce temperature to 350 F and bake 40-50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate.

6. If desired, offer whipped cream or whipped topping and nuts
