Cheese Puff Balls

Makes about 24 balls. Recipe is from Our Lady of the Lake Children’s Hospital Pediatric Dietitian Nutritionist Natalie Porta.

¾ cup flour

2 tbls. water

2 tbls. butter or margarine

3 cups grated cheddar cheese

1. Preheat oven to 400 F. Mix all ingredients, adding more water as needed to make stiff dough. Roll dough into small (3/4-inch) balls.

2. Place cheese balls on cookie sheet. Bake until lightly browned, about 10-15 minutes. Serve warm or cold.

Nutritional analysis per ball: 60 calories and 2.7 grams protein.
