3 tbls. extra-virgin olive oil

3 cloves garlic, chopped

2 lbs. fresh, ripe plum tomatoes, about 1-1/2 lbs. total, cored and coarsely chopped

Pinch crushed red pepper flakes

1/2 lb. linguine

1/2 cup diced, fresh mozzarella cheese

1/4 cup fresh basil leaves, thinly sliced

Salt and ground black pepper

1. Place oil and garlic in a large skillet and cook over medium-high heat for 30 seconds, or until it begins to sizzle.

2. Add tomatoes and crushed red pepper; cook, stirring occasionally until the tomatoes begin to juice up. Reduce heat to low and cook, stirring occasionally, until sauce thickens. Set aside.

3. Prepare pasta according to package directions. Drain and toss with tomato mixture. Stir in cheese and basil and toss to coat. Season with salt and pepper to taste.
