‘Creole’ Shrimp Creole

Serves 4. Recipe is by New Orleans Tomato Co.

3 tbls. olive oil

1 cup diced onion

1 cup diced celery

1 cup diced green bell pepper

1 clove garlic, chopped

1 jar New Orleans Tomato Co. Sauce (see note)

1/4 tsp. cayenne pepper

1/2 tsp. freshly ground black pepper

Salt, to taste

2 to 3 dashes of favorite hot sauce, optional

1 lb. large peeled and deveined fresh Gulf shrimp

Lemon wedge

Hot cooked rice

Chopped green onions, for garnish

1. Heat the olive oil in a large sauté pan over medium-low heat. Add the onion, celery and bell pepper and very slowly cook until soft, about 15 minutes. Add the garlic and cook until fragrant.

2. Stir in the sauce Add the peppers, salt and hot sauce and stir. Simmer until vegetables are soft and the sauce is slightly thickened, about 20 minutes, stirring occasionally.

3 Add the fresh shrimp and cook until they are just pink, about 10 minutes. Squeeze the lemon wedge on the pan and stir.

4. Serve over rice and garnish with chopped green onion.
