Turkey Pot Pie
Serves 4 to 6. Recipe is by Beth Colvin, who says this recipe is perfect for using up leftover turkey and vegetables alike.
1 (10.75-oz.) can condensed cream of mushroom soup
1 (10.75-oz.) can condensed cream of chicken soup
12 ozs. or so cooked vegetables, or 1 (12-oz.) bag frozen mixed vegetables, cooked
Salt and Creole seasoning, to taste
2 cups chopped, cooked turkey
9 frozen biscuits or raw biscuits made from your favorite recipe
1. In a small pot, heat the soup with one can full of water or broth. Add the vegetables, seasoning and turkey. Cook, stirring frequently, until warm through and well combined.
2. Spray a 9-by-9-inch dish with cooking spray. Pour in the turkey mixture, then top with biscuits.
3. Bake in a 350-degree oven for 30-40 minutes, or until biscuits are golden brown and cooked through.
