Makes 1 glazed ham, serving 15-20. Recipe is by Cynthia L. Nobles.
1 (8- to 9-lb.) bone-in cured or smoked ham
2 tbls. orange juice
2 tbls. honey
1 cup orange preserves or marmalade
3 tbls. bourbon
1. Score fat layer of ham horizontally and vertically at 1-inch intervals and stud the centers of the resulting squares with whole cloves. (Can be done one day ahead. Take ham out of refrigerator 1 hour before baking).
2. Preheat oven to 325 F. Place ham on a rack over a foil-lined roasting pan. Bake 1 hour.
3. Meanwhile, in a small saucepan, stir together orange juice, honey and preserves. Bring to a boil and simmer over low heat 1 minute. Remove glaze from heat and set aside, uncovered.
4. After ham has baked 1 hour, stir bourbon into glaze. Spread half of glaze on ham and bake 15 minutes. Raise oven temperature to 350 F. Spread on remaining half of glaze and bake 15 more minutes. Remove ham from oven and allow to cool at least 20 minutes before slicing.
