Beaucoup Salad (Creole Tomatoes With Hass Avocados, Vidalia Onion and Green Vinaigrette)

Serves 4. Recipe from George’s Produce, New Orleans

For the Green Vinaigrette:

1/4 cup red wine vinegar

1/2 cup extra virgin olive oil

Juice of 1 lemon

1 tbl. finely minced garlic

Salt and coarsely ground black pepper, to taste

1 very ripe Hass avocado, peeled and mashed

For the Salad:

3 ripe (but still slightly firm) Hass avocados, sliced

1 large Vidalia onion, thinly sliced

2 large Creole tomatoes, sliced

1 large red bell pepper, finely chopped

1. Make the vinaigrette: Combine all ingredients. Use a traditional or immersion blender to process until smooth. Set aside.

2. Assemble the salad: Layer all of the salad ingredients on a platter. Pour the vinaigrette over the salad. Serve.
