Strawberry Salad with Honey Balsamic Dressing

Makes 4 servings. Recipe is by Teresa B. Day.

4-6 cups mixed greens

1 pint strawberries, halved

½ cup goat cheese, crumbled

¼ cup pecan halves

¼ cup balsamic vinegar

2 tablespoons honey

1 teaspoon salt

2 teaspoons black pepper

½ cup olive oil

1. Toss the greens, strawberries, cheese crumbles and pecans in a large bowl.

2. In a food processor, pulse balsamic vinegar, honey, salt and pepper. While it’s running, slowly pour in the olive oil and turn the machine off.

3. Drizzle the dressing over the salad and toss until very lightly coated. Serve immediately.
