Tea Cakes (Ma Mere’s Cookies)
Recipe is from Marcia Gaudet, of Lafayette.
1 cup sugar
1 stick butter or margarine, melted
2½ cups flour
1 level tablespoon baking powder
1½ teaspoons vanilla extract
1. Preheat oven to 350 F.
2. Beat eggs until light and foamy. Add sugar and beat until sugar is dissolved.
3. Add melted butter and beat.
4. Sift flour with baking powder. Add to egg mixture with vanilla and stir. Refrigerate for a few hours or overnight.
5. Roll out between waxed paper, ½-inch thick and cut with cookie cutter. Place on greased cookie sheet and bake 10 minutes or less. Remove from cookie sheet while still warm.
Note: Dianne Gaines rolls her cookies out thinner.
