Tomato and Mint Salad

5 firm ripe tomatoes, peeled and cut up
½ cup chopped onion
3 cloves garlic, (pressed)
¼ cup olive oil
2 tablespoons fresh lemon juice
1 heaping tablespoon fresh chopped mint
Salt and freshly ground black pepper as desired
1. Peel and cut up tomatoes and place in glass bowl.
2. In separate bowl, combine onion, garlic, olive oil, lemon juice and chopped mint. Stir to blend. Pour over sliced tomatoes.
3. Season with salt and black pepper and serve.
