Chef Justin Timineri’s Florida Firecracker Corn Relish

Serves 6. Recipe is from chef Justin Timineri of the Florida Department of Agriculture and Consumer Services.

4 cups fresh corn kernels, grilled or roasted

2 tbls. fresh lime juice

1 small jalapeño, seeded and coarsely chopped

11/2 tsps. honey

1/4 tsp. cumin

1/4 cup vegetable oil

Salt and black pepper, to taste

6 medium radishes, halved and thinly sliced crosswise

1/2 cup coarsley chopped flat-leaf parsley

1/4 small red onion, peeled and thinly sliced

1. In a large mixing bowl, combine lime juice, jalapeño, honey and cumin. Mix well. Add vegetable oil and whisk until combined. Season the vinaigrette with salt and black pepper.

2. Combine corn, radishes, parsley and red onion with vinaigrette. Mix well, then season to taste with salt and black pepper.
