Turkey Salad Croissant
Makes 4 servings. Recipe is from Jennie-O Turkey.
2 cups cooked, chopped turkey
½ cup sliced celery
1?3 cup chopped cashews (I used sliced almonds)
½ cup plain low-fat yogurt
¼ cup mayonnaise or salad dressing
2 tablespoons Major Grey mango chutney
½ teaspoon curry powder
4 croissants, split
Leaf lettuce (I used a mix of spinach and arugula)
1. In bowl, combine cooked, chopped turkey, celery and nuts.
2. In separate small bowl, stir together yogurt, mayonnaise, mango chutney and curry powder.
3. Stir mayonnaise mixture into turkey mixture. Spoon ¼ filling on bottom of each croissant. Cover with croissant tops.
Note: Can also be served on crackers as appetizer or as a salad over greens.
