Southern-Style Green Beans in Bacon Grease Stock
Makes 4 servings. Recipe is by Cynthia L. Nobles. Remember your grandmother saving grease from the morning bacon in a coffee can? If you’re fresh out of bacon grease, you can use something healthier, such as olive oil.
3 tablespoons bacon grease, or 3 tablespoons olive oil
½ cup finely chopped onion
3 cups chicken stock
3 cups water
½ teaspoon salt
½ teaspoon ground black pepper
1¼ pounds fresh green beans, ends trimmed
1. In a medium pot, add bacon grease and onion and sauté over medium heat until onion is translucent.
2. Add stock, water, salt and black pepper. Bring to a boil and simmer 5 minutes.
3. Add green beans and cook at a bare simmer, uncovered, until very soft, about 1-1½ hours. Drain and serve.
