ADVOCATE-TESTED RECIPE

Roasted Shrimp (Scampi-Style)

Serves 6 to 8. Recipe is by Corinne Cook.

2 tablespoons butter, melted

2 tablespoons olive oil

1/2 teaspoon salt or to taste

Generous grind of black pepper

Pinch of cayenne, optional

2 green onions, chopped (green and white parts)

¼ cup fresh lemon juice

2 cloves garlic, minced

2 pounds large or extra-large shrimp, peeled and deveined

Noodles, grits or toast, if desired

1. Lift oven rack so that it is about 4 inches from heating element. Preheat oven to broil.

2. In large bowl, combine melted butter, olive oil, salt, black pepper, cayenne, green onions, fresh lemon juice and garlic. Stir to blend and dissolve salt.

3. Coat shrimp in mixture and then spread shrimp in single layer in rimmed baking pan; including all the oil and seasoning. Place the pan 4 inches from heating element. Cook 2 minutes, turn shrimp and broil on other side for 1 or 2 minutes — don’t overcook.

4. Transfer shrimp and pan juices to platter and serve over noodles, grits or toast.
