Microwave Baked Apple

2 baking apples (Gala, McIntosh, Jonagold, Granny Smith, Fugi, etc.)
Fresh or dried cranberries, raisins, nuts, optional
2 tbls. water
2 tbls. lemon or orange juice
2 tbls. brown sugar
1?8 tsp. cinnamon
Pinch of nutmeg, optional
1. Core apples, but do not go all the way to the bottom. Peel apples about 1?3 of the way down. Place apples in dish.
2. If desired, sprinkle a few fresh or dried cranberries, raisins or nuts into the cored cavity of the apple.
3. In a small bowl, mix water, juice, brown sugar, cinnamon and nutmeg together. Pour over apples.
4. Dot with butter, cover with lid or plastic wrap and microwave on high heat for 5 to 7 minutes or just until apples are tender and cooked through. Open very carefully away from you because steam builds up in dish.
