Serves 12 to 16.

2 cups brown sugar

2 cups flour

1 tsp. cinnamon

1 stick butter, softened

2 eggs, beaten

1 tsp. baking soda

1 cup buttermilk

2 tsps. vanilla

1 tsp. salt

1. Make a crumbly mixture with brown sugar, flour, cinnamon and butter. Reserve 1 cup of the crumbs for topping; set aside.

2. To the remaining crumb mixture, add eggs and blend. Dissolve soda into buttermilk; add to the egg mixture. Add vanilla and salt.

3. Pour mixture into 2 (8-inch) round cake pans that have been slightly greased. Sprinkle reserved crumbs over top.

4. Bake at 350 degrees for 30 to 35 minutes.
