Apple Glazed Carrots

Serves 4. This recipe was submitted by Elaine Netter to “If It’s Thursday, it must be Elks,” a collection of recipes by Lady Elks Lodge #1153 of Donaldsonville.

4 tablespoons butter

3-4 medium apples, peeled, cored and chopped

6-8 carrots, sliced

Pinch of salt

3 tablespoons honey

Dash of nutmeg or cinnamon

1. Melt butter in saucepan. Add apples, cover and cook over medium heat until softened. Stir and add carrots and pinch of salt. Do not add water.

2. Cover and cook until carrots are done to your liking. (Time depends on how mature the carrots are). Taste test after 6 minutes.

3. Just before serving, stir in honey, nutmeg or cinnamon and heat to boiling.
