Strawberry Bread

Serves 10 to 12. Recipe is from Janice DeLerno.

3 cups flour (1/2 regular and ½ whole wheat)

1 tsp. salt

1 tsp. baking soda

3 tsps. cinnamon

2 cups sugar (1 regular and 1 brown sugar)

3 eggs, well beaten

2 (10-oz.) packs of frozen strawberries (thawed) or fresh in season

¾ cup cooking oil

½ cup apple juice

1¼ cup chopped pecans

1. Stir dry ingredients together in large bowl making a well in the center. Mix remaining ingredients and pour into well. Stir enough to dampen all ingredients.

2. Pour into two greased loaf pans or 1 Bundt pan. Bake at 350 degrees for 45 minutes or until knife comes out clean. Cool in pan for 10 minutes, then rest on wire rack.

Note: This recipe also makes muffins. Approximate cooking time is 12-18 minutes.
