Boursin Cheese Ball
Makes a 3-inch ball. Recipe is by Corinne Cook.
1 stick butter (8 ounces), room temperature
8 ounces cream cheese, room temperature
2 or 3 cloves garlic, pressed or finely minced
¼ cup chopped fresh parsley
2 tablespoons finely sliced green onions
½ teaspoon salt or to taste
Generous shake of Tabasco or cayenne pepper
Crackers or thinly sliced, toasted French bread
1. Have butter and cream cheese at room temperature. Stir thoroughly to mix or beat with mixer to have it fluffier.
2. Add garlic, parsley, green onions, salt and Tabasco.
3. When well combined, taste for seasoning. Seasoning improves as it sits.
4. Place on a piece of plastic wrap or waxed paper and form into a ball. Chill. Remove from refrigerator 30 minutes before serving.
Serve with crackers or thinly sliced, toasted French bread.
Note: A pat of this on a hot, baked potato is also delicious.
