Superb Strawberry Lemonade

Makes 4-5 servings with ice. Recipe is from Corinne Cook. This is a richly, delicious lemonade. My friend makes a cocktail out of it by adding vodka.

I’ve served this lemonade along with a shortbread cookie as a dessert.

2 cups hulled and sliced fresh strawberries plus 4 whole berries for garnish

6 lemons (about 1 cup fresh lemon juice)

½ cup sugar (or more to taste)

3 cups water

Mint, if desired for garnish

1. In blender or food processor, puree washed and hulled fresh strawberries with 2 tablespoons fresh lemon juice.

2. Strain strawberry puree through a fine strainer to remove some of the seeds or pulp if any is remaining. Place strained strawberry mixture in pitcher or large jar.

3. Add remaining fresh lemon juice, sugar and water. Stir until well mixed and sugar is dissolved. Taste and add more sugar, if desired. Refrigerate.

4. To serve: Pour strawberry lemonade over ice cubes in glass. Garnish with strawberry on wooden skewer or with sprig of fresh mint.
