The olive aisle in the grocery store continues to grow.

We have a large variety to choose from, in all sizes and stuffed with everything from cheese to nuts.

Olive-Stuffed Goat Cheese Bites is a quick appetizer for olive lovers. Use any good pitted olive, stuffed or unstuffed, to encase in the duo of goat cheese and cream cheese, and then roll in chopped nuts. I tested this recipe with a garlic-stuffed olive and rolled some in chopped pistachios and some in toasted pecans. I used nuts that I had in the freezer.

If using a large olive, by the time it’s coated and rolled, it’s larger than one bite. In that case, you can cut them in half for the tray. Or, once the bites are chilled, they’re sturdy enough to hold and be eaten like a finger food.

Football season is here and it means enjoying food with friends. If you tailgate or have friends over to watch the games, save this recipe for the next party. It’s only four ingredients, so you don’t have to empty the pantry.
